Process
Similar to the single head machine in tiffin/catering service, this single head curry making machine for restaurant is working with SCADA control system. There are more than 1000 recipes with the option of adding our own recipe. Once the desired recipe selected the automated line will perform the operations like washing, peeling, cutting (4 different types of cutting), boiling, smashing, bulb cracking, paste making and dosing.
How is it different from tiffin/catering service single head machine?
The cooking line for restaurant is designed for 60 visitors per hour and per visitor one to three cuisines. This line is having relatively small instruments but large in number.
It performs the process like heating, chopping, stirring, kneading, blending, steaming, sauté, rinsing, whipping, washing and cleaning. There is a separate system of spices dosing as per the recipe, it can handle 36 spices and 4 liquid for dosing.
Machines
This line consist of vegetable washing, vegetable peeling, vegetable boiling, vegetable chopping, vegetable cutting (4 types), vegetable smashing, bulb braking, pest making, gravy maker, pulp maker etc. All the instruments have before/after washing system, programable cut vegetable dozer, programable oil, gravy, water dozer and 36 different types of spices dozer with bucket elevator and liquid transfer system.
The heart of the system is automated cooking instrument (cooking pot) which will take care cooking as per instrument size. There are eight cooking pots with indexing and 16 vessels indexing with pre-cook food. Variants available as per the size for 60 people per hour and maximum 180 cuisines.
Working
Whenever any recipe is selected and the quantity of dishes defined there will a detailed list of ingredients appear with the quantity in terms of kilogram appears on the screen. One has to decide the number of cuisines for particular day and fill the storage tanks as per list of ingredients. To fill the storage tank put the desired quantity in the bucket and that’s all. the desired quantity will go to washer first. in the end one will have the final cooked food for the given number people (quantity), meanwhile the system will give real time information to the manager by Email and WhatsApp application.
The information will be in the form of level of storage, shortage of ingredients alarm, total quantity made, timing of preparation etc.
During the process the instruments in the line will follow the same method as we do in our kitchen.
Example: For mix vegetable curry it will take each vegetable one by one and conduct all the process mentioned above, once it is ready to cook it will be transferred in to the indexing vessel where it will wait for its turn to pour in to the cooking pot. Once all the required ingredients are ready in the indexing table, the pot will take oil for sauté. It will conduct the same process of taking mustard seed, chopped onion and sauté will done. the all the next processes like adding water, adding mix vegetables from indexing, adding liquid curry (if required) and adding spices as per the desired quantity will handled by the SCADA system and it will manage the timing, heating temperature, starring time and whipping time during the process to make tasty dish for given quantity.
Features
There are more than 1000 recipes also one can introduce their own recipes in the given format. It will make the unique taste dishes at all times. There will not be any difference in the taste if the cook is changed. The system will take care of different temperature maintenance during the cooking and also it will take care of all other operations like chopping, stirring, kneading, blending, steaming, sauté, rinsing, whipping, washing and cleaning so that cooking method will remain same for one particular dish and it will help to maintain the same taste for years. It will help to built a brand with specific constant taste.
The instruments are made as per the USFDA regulation. The hygiene and cleanliness is maintained at all times. There is an operation of pre wash of ingredients and post wash vessels. also there is an internal cleaning and drainage system for each and every individual instruments, which is designed as per FDA regulations.
